Boondi Laddu


Deepavali is one time of the year when sweets and savories rain at home. Boondi Laddu recipe for all TasteofMysore readers.
Boondi Laddu
Time taken: 1 hour, Makes 15-20 small laddus
Ingredients :

For Making Boondi :
Laddu Besan : 250g
Food Colors (optional)
Oil for deep frying
For Sugar Syrup:
Sugar : 250g
You need 2 laddles with holes. One for making boondi and the other to spoon the boondi out of oil.
1. Laddu besan is a type of besan which has grainy texture.
2. Add a tbsp of semolina to regular besan if you do not have this 'laddu besan'
1. Mix besan by adding little water at time to make smooth batter.
2. Batter should be smooth, airy and lump free to make these laddus.

3.When you start mixing boondi batter, parallely heat oil in a frying pan. Lay a kitchen tissue on a plate and keep your laddle ready to spoon the boondis.

4. Weigh sugar and  100ml water to sugar and bring it to boil. The sugar syrup should attain 1 thread consistency. When you pull a drop of syrup between your thumb and index finger it forms a thread. Squeeze half a lemon to the sugar syrup and mix well. Switch off the stove and keep it in a safe place to add fried boondis.

5. Mix batter and keep the batter ready to fry boondis like this :

6. Fry boondis till they are crisp and turn golden brown. Spoon the fried boondis to sugar syrup and mix well.

7. If you intend to make color boondis, Take a bigspoon full of batter in a small bow and add food color to it. Mix well and fry boondis as shown above.

8. Once you are done frying all boondis, mix them well and drain the boondis to a food processor with kneading attachment. Knead this for a minute or two.
9. Squeeze out the extra sugar syrup. Spread them on a tray. Grease you hands, take a handful of boondi and shape them into round balls. Garnish with your favorite dry fruit.

10. Decorate them as you feel good. Enjoy the yummy boondi laddu this Deepavali.
